Dinner is a fine date and a terrible first date. You are locked into a table, facing each other, for ninety minutes, and if it is not working there is no exit until the check comes.

Play something
An arcade bar solves the two hardest problems on a first date at once: there are long silences and they are fine, and there is a natural way to end it. North Park is the neighborhood for this, and it runs at 75% by 7pm — busy enough to feel like a night out, not so busy you cannot get to a machine.
Tiger! Tiger! Tavern is the easy landing spot afterwards, and it is a short walk from most of 30th Street.
Walk first, drink second
The most underrated date structure in this city: meet at the water an hour before sunset, walk, then get one drink. It is free, it is outdoors, and by the time you sit down you have already been talking for forty minutes.
Coronado works best for this — the beach, then Sun Deck Bar (Hotel Del) or McP's Irish Pub depending on how the walk went. La Jolla Cove into George's at the Cove is the dressier version.
In Encinitas the timing is different and worth knowing: the 101 is already at 79% by 6pm and thins out to 41% by 10pm. It is an early-evening town. Walk at seven, drink at nine, and you will have the place mostly to yourselves.
Do a small crawl instead of one long sit
Three short stops beats one long one, because each move resets the conversation. The requirement is walkability, which rules out most of the county and leaves you with a handful of real options.
South Park is the best of them for a date — The Rose Wine Bar, then Counterpoint, then South Park Brewing, all within a few blocks, and the neighborhood quiets down as you go (80% at 8pm, 49% at 10pm). North Park is the louder version with more choices.

The second-date version
Once you have got past the interview, the good stuff is the ordinary stuff: a Tuesday at a neighborhood bar where nobody is performing. University Heights is built for this — it sits at 26% at 5pm and does not hit 80% until eight, so an early weeknight drink there is genuinely calm. Park & Rec and Madison on Park are the two to know.
