The short answer: 2 AM, everywhere. California law cuts alcohol service at 2 and San Diego gets no exception — no late-night district, no members' side door worth the trouble. Kitchens shut earlier. Doors get picky before last call. Plenty of rooms quietly stop seating people around 1.
The longer answer is more useful, because "when do bars close" is almost never the real question. The real question is where is still worth being, late. We have the hour-by-hour pattern for the whole city — which neighborhoods fill when, and which ones quit early. Here's what it says.
San Diego doesn't share one bedtime
Old Town is typically packed at 9 PM and still around full at 11, and then it falls off a cliff. It's a dinner district at heart. Gaslamp runs the opposite shape: typically full at 10 PM and holding through the last hour, because clubs don't peak until the end.
The most useful late-night fact in this city: Convoy typically peaks at 10 PM–11 PM, averaging around packed. The karaoke rooms and izakayas hit their stride at the exact hour the dinner neighborhoods start putting chairs on tables.
Hour by hour, where to be
At 10 PM — you still have the whole map. Pacific Beach is typically around packed at its 8 PM peak and still full at 10; Mavericks Beach Club and 710 Beach Club hold the loud end, and the Gaslamp's big rooms — barleymash, The Tipsy Crow — are only warming up.
At 11 PM — think in districts, not bars. The Gaslamp and Convoy are the two parts of town typically still climbing. Hillcrest holds too: typically about full at 10 PM, the latest-peaking of the central neighborhoods, with Rich's carrying the dance floor.
At midnight — the dives inherit the city. The cocktail rooms thin out and the rooms with nothing to prove fill up. In Pacific Beach that's The Silver Fox Lounge. In Ocean Beach, the Newport Avenue stretch around Pacific Shores keeps its regulars late. At 1 AM — you don't change venues, you finish where you are. Rooms stop letting people in before they stop serving, and the whole skill of a late night is being inside the right one before the door tightens.
The 2 AM problem
Everything empties onto the sidewalk at once, and every rideshare in the county gets summoned in the same ten minutes. Two moves beat the surge: walk a few blocks off the strip before you request, or leave at 1:30 with the night's dignity intact. San Diego's real late-night meal is a burrito under fluorescent light.
